Biography

Li Li Ji is Professor and Director of the Laboratory of Physiological Hygiene and Exercise in the School of Kinesiology since 2011. He served as the Director of School of Kinesiology during 2011-2017. Dr. Ji graduated from East China Normal University, received his MS and PhD at the University of Wisconsin-Madison in 1982 and 1985, respectively, specializing in exercise physiology. During 1985-1987 he was a postdoctoral fellow at the Institute of Enzyme Research of UW-Madison. He served as Assistant and Associate Professor in Exercise Physiology and Nutritional Science at University of Illinois at Urbana-Champaign during 1987-1993. He returned to UW-Madison in 1994 and served as a professor in the Department of Kinesiology and Division of Nutritional Science during 1994-2011. He was elected to be Chairman of the Department of Kinesiology for four terms during 1994-1997 and 2003-2010. Dr. Ji’s research expertise is cellular and molecular exercise physiology, especially the role of free radicals and antioxidants in muscle function, adaptation to exercise, pathogenesis and prevention, cell signaling and aging. Dr. Ji has published over 200 peer-reviewed articles and book chapters, and given over 160 invited international and domestic lectures. Dr. Ji’s contribution to exercise biochemistry spans over three decades, ranging from free radical generation and oxidative stress during exercise and aging, gene regulation of antioxidant enzymes, redox signaling of homeostasis and hormesis, to the role of nutrition and phytochemicals. His recent research focuses on mitochondrial quality control and its relationship with exercise adaptation, muscle atrophy, and aging. Dr. Ji has served on multiple editorial boards and study sections of federal agencies and private foundations. He is a member of the National Academy of Kinesiology since 2006 and a Fellow of the American College of Sports Medicine since 1990. Dr. Ji’s scholarly work has received ~22,000 citations and has earned a Google Scholar H index of 73.

Graduated in Animal Science from the Federal University of Lavras (1979), Master in Animal Science from the Federal University of Viçosa (1983), Ph.D. in Animal Science from the Federal University of Viçosa (1987), postdoctoral internship at The University of British Columbia, Canada , senior internship at Purdue University, West Lafayette, Indiana, USA. He is currently a Full Professor at the Federal University of Lavras and a CNPq researcher since 1987. He has experience in Animal Science, with an emphasis on Nutritional Requirements of poultry and swine, Animal metabolism, working mainly on the themes: nutritional requirements, nutrient digestibility, animal energy and calorimetry, metabolism of vitamins and minerals, use of enzymes and other additives to improve the efficiency of diets, precision nutrition and quality of animal products and nutraceutical foods. He is a member of the editorial boards and reviewer of several scientific journals indexed in Brazil and abroad and of associations linked to animal science worldwide. Author of books Monogastric Nutrition (2008/2013/2021), Poultry and Swine Digestion Physiology (2009), and chapters of three other books (two in Brazil and one in Holland) related to poultry nutrition and production. It has more than 220 scientific articles published in indexed journals. Has supervised more than 88 students at master's level and more than 30 at doctoral and post-doctoral level. He participated in several high-impact TV programs such as Roda Viva (Culture TV), Canal Livre (Band TV) and EPTV (Globo TV) regional with interviews related to the quality of animal products for human consumption.

Elisabeth Borges Gonçalves has completed her PhD at the age of 35 years from the University of Campinas (UNICAMP), Brazil. She worked in some universities as a Professor and she has been working at Embrapa Food Technology, in Brazilian Agricultural Research Corporation (EMBRAPA), on several projects from diverse mixed domains, such as sensory evaluation of foods; environmental, social, and economic impacts of food technologies; statistics, metrology and quality for food laboratory testing for many years. She has published about 100 articles and has served as an editorial board member at multiple scientific journals, besides being a member at regulated profession councils in Rio de Janeiro State, Brazil. Currently she has also been expanding her training taking specialization in Content marketing, Digital marketing, Leader coach and Design Thinking, as well as distance learning courses about Integrity and ethics management and Team Management, furthermore she has updated her Quality training by taking the Quality requirements at Embrapa course

Fernando José Cebola Lidon is a Full Professor in the NOVA School of Science and Technology of the New University of Lisbon, Portugal and the Director of the GeoBioSciences-NOVA, GeoTechnologies-NOVA and GeoEngineering - NOVA (GeoBioTec-NOVA). Is also the Coordinator of the Scientific Committee of the Ph D Program on Agroindustrial Technology and of the Msc. on Agroindustrial Production and Transformation Technologies. Pierluigi Plastina obtained his degree in Chemistry in 2002 and his Ph.D. in Organic Chemistry in 2005 from University of Calabria (Rende, Italy). He was research fellow at the Department of Chemistry of the same University in 2006-2007 working on the development of new methods for the quantitative analysis of bioactive compounds in food matrices by means mass spectrometric techniques. He was post-doctoral fellow at the Division of Human Nutrition of the Wageningen University (Wageningen, The Netherlands) in 2007-2008 working under the supervision of Professor Renger Witkamp on n-3 fatty acid ethanolamides with anti-inflammatory properties. Then he moved back to University of Calabria as a research fellow working on the extraction, identification and pharmacological characterization of bioactive compounds from food matrices. He was visiting scientist at the Wageningen University in 2012 and again in 2013. He is currently permanent senior researcher and adjunct professor of Food Chemistry at the Department of Pharmacy, Health and Nutritional Sciences of the University of Calabria. His main research interests are devoted to the investigation of bioactive lipids with potential anti-inflammatory, antioxidant, anticancer and antidiabetic properties and their identification in food matrices and waste materials. He is author of 45 papers, 5 reviews and 3 book chapters. He has been serving as an editorial board member of reputed journals, such as Food Quality and Safety and Molecules (section Food Chemistry).

Head of the LEAF (Linking Landscape Environment Agriculture and Food) research centre from the Portuguese Foundation for Science and Technology (FCT). Coordinator of the Food Science and Engineering teaching areas at the Industry interface, pioneered the studies on Food Texture and Rheology in Portugal and set up the Food Rheology and Cereal Technology Labs to support research. Sreenivasan Sasidharan obtained his Ph. D. degree in 2007 from Universiti Sains Malaysia, Malaysia. Currently, he serves as the Deputy Director in the Institute for Research in Molecular Medicine, Universiti Sains Malaysia. He has over 179 publications with a total impact factor of 190 (With more than 3300 citations in Scopus and h-Index = 31), published 13 chapters in book with international publishers, as well as Keynote, Invited Speaker and Chair of International & National Congresses. Has been serving as an Editorial Board Member, reviewer of international journals and evaluator for national and international grants. He has been recognized nationally and internationally as an expert in Pharmacognosy, Pharmacology, and anticancer studies, especially those that involve the pharmacological activity of medicinal plants. Dr. Haleama Al Sabbah is Associate Professor and former Chair of Health Sciences Department at Zayed University in UAE. She completed her PhD in Public Health Nutrition (PhD in Medical Sciences) in 2008 from the Faculty of Medicine, Gent University, Belgium. She awarded a doctoral scholarship from Belgian Technical Cooperation (BTC). Her PhD study was part of the National Study of the Palestinian Health Behaviors in School-aged Children (HBSC-2004). Dr. Al Sabbah was a Fulbright Senior Visiting Scholar and did Post-Doctoral studies in Public Health and Nutrition at Jean Mayer Human Nutrition Center, Tufts University, Boston, USA from 2011 to 2012. She served as the director of Public Health Department, Faculty of Medicine, An-Najah University, Palestine from 2009 to 2013. Dr. Al Sabbah has published numerous number of articles in scientific journals and served as an editorial board member and reviewer for several peer-reviewed journals. Dr. Al Sabbah is regularly invited to both national and international conferences, courses and research studies in all over the world, including Europe, USA, Canada, West Africa and some Arab countries.

Martha Elisa Ferreira de Almeida has a degree in Nutrition from the Federal University of Ouro Preto (UFOP - 2001), a Master's in Agrochemistry from the Federal University of Viçosa (UFV - 2003), and a Ph.D. in Agrochemistry and Agrobiochemistry from the Federal University of Lavras (UFLA - 2012). Since 2008 she has been a full professor at the Federal University of Viçosa (UFV), Campus Rio Paranaíba, Minas Gerais, Brazil. She was coordinator of the Nutrition Course at the Federal University of Viçosa (UFV), Campus Rio Paranaíba (2010 - 2017). She is currently a reviewer of national and international journals, and an evaluator of INEP Nutrition Courses since 2018.

Dr. Amir Alakaam is an Associate Professor and interim director of Master of Public Health at University of Tennessee in Chattanooga. He is also a Registered Dietitian in United States. Dr. Alakaam has over six years of clinical experience as a physician in family medicine and general surgery, and several years of teaching and research experience in the area of nutrition and public health at university level. Dr. Alakaam has served as a book reviewer, invited journal reviewer for numerous peer reviewed journals, and a professional member of the Academy of Nutrition and Dietetics, American Public Health Association, American Diabetes Association, and other national and states associations. Dr. Pradyuman Kumar is working as Professor with Department of Food Engineering and Technology, Sant Longowal Institute of Engineering and Technology (Deemed-to-be-University) Longowal (Punjab). Dr. Pradyuman has acquired his PhD (Agricultural & Food Engineering) from Indian Institute of Technology Kharagpur, Master degree from GB Pant University of Agriculture and Technology, Pantnagar after graduation from Banaras Hindu University Varanasi. He is recipient of Graduate Research Assistantship during his Master programme.
