Dr. Tetsuji Yamada is currently a professor of Health Economics for the Department of Economics, an Associate Faculty for the Graduate Faculty of M.A. and Ph.D. programs for the Department of Childhood Studies, and a Research Associate for the Center for Children and Childhood Studies at Rutgers University, the State University of New Jersey, USA. Dr. Yamada is also a researcher for the Walter H. Shorenstein Asia-Pacific Research Center, Comparative Health Policy Program, Stanford University and for Hosei Institute on Aging, Hosei University in Japan. Prior to his current position at the Rutgers University, Dr. Yamada served as a health economist at the International Leadership Center on Longevity and Society in New York, as a representative of the Japan Economic Federation, as a health economics research associate of the NBER, as a member faculty of the Research Fellows of NBER, as a health economics adviser of the WHO, as a visiting research scholar of the University of Tsukuba (Japan), as a research associate of the Center for the Pacific Basin of the Federal Reserve Bank of San Francisco, as an adjunct professor in the Department of Health Economics & Management at the Peking University, an associate professor of Ritsumeikan University, Kyoto, Japan. He completed his Ph.D. and M.Phil. in Health Economics from the Graduate School and University Center of the City University of New York; M.I.A. in International Affairs and Public Policies from Columbia University in New York; and B.A. in Economics from Toyo University in Japan. His numerous publications appear in health and health economics fields. Dr. Yamada has published more than 100 research papers, been internationally active in presenting research papers at various professional conferences, and served an editor, an editorial board member, a referee and a reviewer for professional journals, books and research funding organizations.

Dr Jason O'Rourke is the headteacher of Washingborough Academy, a primary school in Lincolnshire, UK. He has been in the education sector for 30 years, previously working in Africa, the Middle East and the Far East. In the 14 years that Jason has been at Washingborough Academy, the school has become a national leader in food education. The school has its own children's kitchen, commercial kitchen, outdoor kitchen, organic vegetable gardens (which only grow heirloom fruit and vegetables), heritage orchard, wood-fired pizza oven and beehives. All children at the school cook every week and the cookery lessons are published on the academy's own YouTube Food Channel. The school has been recognized for its commitment to food education with numerous awards, including the Soil Association's Gold Catering Mark, the Food for Life Gold School Award and the Educatering School Food Plan Award. Jason himself has been recognized as the Caroline Walker Food Hero of the Year and was asked to be a Headteacher Adviser to the Department of Health and Social Care for the government's Childhood Obesity Plan. Jason has also worked on a number of European partnerships that focus on children’s health and well-being and is currently working with the United Nations Food and Agricultural Organisation (FAO) on their school food nutrition education capacity development materials. Jason first came across the SAPERE method of sensory food education while studying for his doctorate in Food Education and School Leadership. He was invited to Norway to the SAPERE symposium, and this visit inspired him to be the first headteacher to introduce the SAPERE method into a British primary school. He went on to co-found the charity TastEd, with acclaimed food writer Bee Wilson, to introduce the method to as many primary schools as possible. Jason is the UK representative on the SAPERE European Board and TastEd is now used as a case study for the Department for Education Early Years programme and is currently being used in over 850 schools and EYFS settings. Jason is a passionate advocate for food education and he regularly speaks nationally and internationally on the topic. He has delivered Westminster Briefings as well as talks in Iceland, Norway, Sweden, Denmark and China. He is also a member of the All Party Parliamentary Group on School Food.
